BIG SANDY, Texas — Running a business without electricity and water is nearly impossible.
"It was absolutely catastrophic," said Circle M Crawfish owner Ed Williams. "It would of been cheaper to close doors, but thanks to social media we stayed open."
General manager Steve Maldonado wanted to give back to his community after the storm and focus on the bright side - celebrating Father's Day.
And that's exactly what they did.
Since the power outage became widespread, Circle M Crawfish went mobile on June 16 and began operating out of their catering trucks.
Williams spent over $13,000 to become fully operational again. That meant driving over 100 miles to Dallas to bring generators and water pumps into the kitchen.
The cooks were reportedly becoming ill from the heat due to the lack of air conditioning in the kitchen.
"There was also an local ice shortage so we drove to Terrell to get ice," said Williams.
If their struggle wasn't enough, Maldonado was worried about their freezers because the majority of their food is perishable.
"It's like we're a local but on a bigger scale with consequences that can ruin our business," said Maldonado.
Families that are interested in celebrating Father's Day at the Circle M Crawfish can enjoy a limited time seafood platter special and a ribeye just for dads.
"Our community in Big Sandy is small and we wanted to keep the spirit alive by serving our customers," said Maldonado.
